Notes from Stick and Stone FarmWell, hopefully that deluge of rain a week ago came at the the right moment to size up our fall roots. It certainly sized up the weeds and finding the delicata under them is proving challenging. The cabbage moths have been sampling our kales and cabbages so expect very edible but somewhat hole-y brassicas this fall. What use is perfection anyway? What seemed like an unusually smooth summer growing season seems to be easing into a crisp and turbulent fall. Just right as our youngest children age up into middle and high school. With Wendell Berry and Dolly Parton departing a fallen summer mood is upon us. Winds of change and all. Wishing everyone peace, clarity, plum cakes, and arugula pear salads.

In an herby twist on a picnic standard, green goddess dressing elevates potato salad from mundane to wow! Not only is this vegan dressing accessible to all eaters, it also eliminates any worry of mayonnaise sitting in the sun too long, making it a perfect dish to take to your next picnic at the lake (Summer isn’t over!) Grilling the potatoes adds a slightly smoky twist, but if you’re without a grill simply boil the potatoes, skip the onions and proceed with the dressing. |

2 pounds potatoes, scrubbed clean 1 pound onions ¼ cup coconut oil, melted 1 tablespoon kosher salt 1 teaspoon black pepper 1 very ripe avocado ½ cup tahini 1 tablespoon capers, drained of brine 2 cups leafy herbs (in the share and u-pick!), roughly chopped (I used tarragon, mint, parsley and dill, but basil and cilantro would be nice additions too!) The juice of 1 ½ lemons ¼ cup olive oil 2-4 tablespoons water, as needed Kosher salt, to taste
DIRECTIONS: Grill potatoes and onions: set your grill to medium-high heat. Slice potatoes and onions into ½” rounds and stagger them, slipping onion rounds between potato rounds. Place each potato (with onion rounds inserted) on its own large sheet of foil. Drizzle melted coconut oil and salt & pepper evenly over each potato. Wrap each potato/onion packet tightly in foil and place on the grill. Close the cover to the grill and grill for 25-30 minutes, turning packets occasionally, or until potatoes are completely softened. (They may have a few scorched spots, that’s okay!) Meanwhile, make the dressing: in a food processor, combine ingredients listed from avocado through olive oil. Process until very smooth. If the mixture is too stodgy, add a few tablespoons of water until a mayonnaise-like thickness is achieved. Taste and season with kosher salt and more lemon juice, if necessary. When the potatoes and onions are completely softened, remove from grill and carefully unwrap. Allow vegetables to cool until comfortable to handle. Cut potatoes into cubes, discarding any scorched bits. Thinly slice onions, discarding any burnt edges. In a large bowl, combine potatoes and onions with green goddess dressing. Serve room temperature or cold.

The roadside garden also has Okra and colorful beans (purple beans are for fresh eating, pink are for shelling at this stage :) At the back end of the creekside garden, cherry tomatoes, basil, parsley and fun unique greens like edible celosia, amaranth, and molokhia await you. Along the way, you’ll also pass by hot peppers, and ground cherries! Look on the ground beneath the plants for the sweetest fruits. And roma tomatoes are starting up back there too.
