Grilled Eggplant & Zucchini Agrodolce by Sara May

Agrodolce is a suave-sounding term for your new favorite condiment. This sweet, sour, slightly spicy sauce perks up grilled summer vegetables with very little fuss. The best part? It keeps for up to two weeks in the fridge, so feel free to make a double batch to have on-hand when the urge to grill strikes you. DIETARY INFO: vegan, gluten-free. Contains soy.

For the agrodolce: ¼ cup dried cranberries ⅔ cup apple cider vinegar 2 tablespoons maple syrup 1 tablespoon soy sauce (use tamari for a gluten-free version!) ½ teaspoon red pepper flakes
To assemble: 3 large zucchini, summer squash or pattypan squash (try a mix of squash!) 2 large eggplants 2 tablespoons olive oil Pinch kosher salt & pepper 1 large handful soft herbs (think mint, parsley, tarragon, cilantro, basil (u-pick!)–or a mix), finely chopped ¼ cup roasted, salted almonds, finely chopped
DIRECTIONS: Make the agrodolce: finely chop dried cranberries into small bits. Place chopped cranberries and remaining agrodolce ingredients in a small saucepan. Bring to a boil and then reduce heat to a simmer. Simmer mixture for 5 minutes, or until reduced slightly. Remove from heat and allow to cool to room temperature. (Refrigerate if not using immediately.) While sauce is cooling, prepare your grill for medium-high heat. Lightly oil the grates. Cut squash and eggplants in half lengthwise, exposing as much surface area as possible. Toss cut vegetables with olive oil and a healthy pinch of salt and pepper. Grill vegetables until lightly charred, flipping over and grilling each side. You’ll probably have to do this in batches, so keep a cutting board or large bowl next to the grill to hold finished vegetables as you rotate through all of your stash. Allow vegetables to cool just enough to comfortably handle, then cut into bite-sized chunks. Immediately toss warm veggies with the agrodolce sauce. Taste and add more salt, if necessary. Stir in chopped herbs and scattered chopped almonds on top of the dish. Serve immediately.

Try Brinjal Pickle (Indian Eggplant Relish), Eggplant & Goat Cheese Dip, or Eggplant Caviar Cucumber, upick mint: Cucumber, Lime & Mint Popsicles Tomato, beets, onion: Heirloom tomato, beet & red onion salad Kohlrabi, upick basil, broccoli: Roasted Vegetable and Kohlrabi Noodle Bowls with Peanut Sauce Kohlrabi, onion (tip: sub in beets for carrots): Kohlrabi and Carrot Slaw Slice a fresh, juicy tomato and put it on a slice of bread with salt and pepper, a fast and delicious snack. Cucumbers are great on top too.

Roadside Garden: basil is looking beautiful and a few sunflowers are starting Creekside Garden: cutting flowers are rolling in! And herbs like thai basil and parsley are ready for you too. AT THE YOUTH FARM PROJECT note: the YFP garden is surrounded by electric fence. Safely open the fence by holding the plastic handle and unhooking it, just be sure to close it behind you too. Find our u-pick in the second field uphill from the lot—look for the wooden signs. You’ll find cutting flowers and some basil for light harvest, possibly some parsley too. Perennials like sage, chives, thyme and more carry on steadily
