LOCAL, ORGANIC-FED, PASTURE RAISED CHICKEN FROM FOUR LEAF FARM

Jose Aguilera grew up with in rural Mexico eating food raised on their farm. At 16 he moved to the U.S., where he noticed that store-bought chicken didn’t taste the same. After decades working in vineyards and farms in the Finger Lakes, Jose decided to make the leap and raise chicken for his family and local community, and Four Leaf Farm was started. Named for the frequency with which he finds four-leaf clovers, with a nod to the chickens’ diet, the chickens are organic-fed and pasture-raised. Order here for pickup next wk at S&S!

CIRCUS CULTURE PERFORMANCES AT PRESS BAY

Circus Culture returns to the Press Bay Backlot with free circus performances this Thurs. 7/25 and next Thurs. 8/1 starting at 6:30pm! Grab some tacos or hand pies and enjoy the show! Cucumbers & Feta with Almond Dukkah by Sara May

For the almond dukkah. This dukkah recipe will make more than you need– try leftovers on eggs, or mixed with nice olive oil on bread

  • 1 tablespoon sesame seeds

  • 2 tablespoons coriander seeds

  • 1 tablespoon cumin seeds

  • ½ teaspoon fennel seeds

  • 2 ounces roasted, salted almonds

  • ½ teaspoon sea salt

  • ½ teaspoon freshly cracked pepper

Feta spread & assembly:

  • 8 ounces cucumbers, cut into bite-sized wedges

  • ½ teaspoon kosher salt

  • 4 ounces Remembrance Farms feta cheese, crumbled

  • 2 ounces cream cheese

  • 1 tablespoon heavy cream, plus more as needed

  • ¼ cup soft herbs (parsley, mint, basil, tarragon, cilantro or a mix), finely chopped

  • Garlic naan or gluten-free flatbread, for serving

  • Extra virgin olive oil, for serving

DIRECTIONS:

  1. In a small frying pan, toast the sesame, coriander, cumin and fennel seeds until just fragrant, stirring constantly. Remove pan from heat and immediately transfer seeds to a mortar & pestle or a food processor. (Reserve pan for heating flatbreads) Add almonds, salt and pepper and pound or pulse to a coarse but uniform consistency. If using a food processor, reserve for making the feta spread– no need to wash in between.

To assemble:

  1. Place cucumber wedges in a strainer set above a large bowl and stir in ½ teaspoon kosher salt. Allow to sit at room temperature while you assemble the feta spread.

  2. Place feta crumbles, cream cheese and 1 tablespoon heavy cream in food processor and pulse until smooth. (You may have to add another tablespoon of heavy cream to reach a spreadable consistency). Season to taste with salt and pepper.

  3. Gently warm naan or gluten-free flatbread in skillet until just pliable. Remove cucumbers from the strainer and discard any water that may have leached out. Toss with fresh herbs.

  4. To assemble, schmear a healthy dab of feta spread across half of your plate. Top with herby cucumber wedges. Sprinkle dukkah over the cucumbers and feta, and top with a drizzle of extra virgin olive oil. Serve with warmed flatbreads.

AT STICK AND STONE FARM

BEHIND THE BARN: The flowers are looking so gorgeous and abundant! Perilla and epazote are still looking lovely too, and there’s some green corriander and cutting celery. And elderberries… the race is on, get ‘em before the birds do!

PERENNIAL GARDENS: Oregano, mint, chives, sage, etc. continue steadily.

CREEKSIDE GARDEN: Basil and Rosemary at the back end of the garden. You may find just a few early peppers. For those asking… tomatoes are planted but still need time to ripen, if you dig deep in the plant you may find the first ripe cherry tomatoes!

AT THE YOUTH FARM PROJECT

THE MAIN GARDEN (atop the hill across the street from the barn) has SO MUCH beautiful basil! There’s also lovely perilla, green corriander and some cutting flowers too!

Perennials continue in front of the greenhouse (mint, bee balm, oregano, etc.)

A Note on YFP U-Pick: For those who haven’t heard, the Youth Farm is not operating this season. We’re doing all we can to keep a luscious garden growing there, and appreciate your understanding if things look a bit different than in past seasons.

Take a peek to see if you can find the first handful of cherry tomatoes, some sprigs of basil or even a couple of flowers in bloom.
